Toffee apple muffins - the best, easiest, versatile muffin recipe needed!?

My husband made tarte tatin for Valentines Day :) and it was great - now we're left with some extra caramelised apples which I think will be delicious made into toffee apple muffins. I'm looking for an easy recipe for plain muffins that I can just stir these pieces into - maybe not too sweet - and would like to use it again with other fillings. I'm in the UK. Toffee Apple Pie


6-8 servings


55 min 25 min prep


5 cups sliced peeled granny smith apples


1/2 cup sugar


1/2 cup brown sugar, packed


1 1/2 ounces Heath candy bars, chopped (or similar)


2 tablespoons cornstarch


1 tablespoon butter, melted


1 teaspoon cinnamon


1 dash nutmeg


1 unbaked pastry shell (9-inches)


TOPPING


1/3 cup flour


2 tablespoons brown sugar


1/4 teaspoon cinnamon


2 tablespoons cold butter


1/4 cup chopped nuts


1 1/2 ounces Heath candy bars, chopped (or similar)





Set oven to 375 degrees.


Set oven rack to bottom position.


In a bowl, combine the first eight ingredients.


Spoon into pie shell.


FOR TOPPING: Combine the flour, brown sugar and cinnamon; cut in the butter until the mixture resembles coarse crumbs.


Add nuts and chopped Heath candy bar.


Sprinkle over the pie.


Bake for 30-35 mins (lowest oven rack), or until the topping is browned, and apples are tender.





Toffee Apple Cake


4-6 servings 1 pie

2 cups self-raising flour


1 teaspoons baking powder


31 3/4 ounces tinned pie apples


1 cup sugar


1 cup milk


1 cup butter


1/2 teaspoon salt


2 eggs


1 teaspoons cinnamon


1/2 cup raisins (optional)


Topping


1/4 cup syrup


1/4 cup butter





Cream together the butter and sugar, add the egg, milk and dry ingredients.


Butter or spray a pie dish and spread half the cake mixture in the dish.


Layer the pie apple over the cake mix.


Sprinkle with cinnamon and raisins and spread rest of cake mix over the top.


Bake at 180 C for 45 minutes.


In the mean time, boil together the syrup and butter until toffee coloured and thickened.


Pour over hot pie, and serve hot or cold.





Toffee Apple and Honey Trifle


20 servings


34 min 30 min prep


2 loaves poundcake (plain is best)


6 apples, peeled and thinly sliced


1/4 cup butter


1 teaspoon cinnamon (or to taste)


2 cups whipping cream


14 ounces cream cheese


1/3 cup honey


1 box vanilla instant pudding mix


1 bag hershey Skor English toffee bits (or Heath chips)





Prepare the various layers of the trifle so they are all ready to assemble together.


Slice the pound cakes down the middle length-wise, then slice each loaf into 10-12 slices, resulting in 20-24 cubes per loaf, a maximum of 48 cubes.


Saute the apples in the butter until soft.


Add the cinnamon and mix well to coat all the apple slices.


In the bowl of an electric mixer, combine the whipping cream, cream cheese, honey and vanilla pudding.


Toss the Skor bits into the food processor and whirl until finely chopped.


Now assemble the trifle in a large clear bowl with straight (ish) sides.


This makes a large quantity so you may have up to three layers.


First lay down a layer of cake cubes Then cover with the sauteed apples.


Then cover with a generous layer of whipped cream.


Then sprinkle with a layer of ground Skor bits.


Repeat the layers until all the ingredients have been used up, ending in a layer of Skor bits.


Note: I actually had more cake than necessary, so I had a layer of cake and cream in the middle before starting over with another layer of cake.





Apple Caramel Muffins


12 muffins


50 min 30 min prep


2 cups flour


3/4 cup sugar


2 1/2 teaspoons cinnamon


2 teaspoons baking powder


1 egg


1 cup milk


1/2 teaspoon vanilla


1/4 cup butter, melted


1/2 cup chopped apples


12 caramel candies, chopped





In a large bowl mix together first 4 ingredients.


In a small bowl blend egg, milk%26amp; vanilla.


Add melted butter%26amp; then pour into mixture%26amp; stir-do not overmix.


Mix in apples%26amp; caramels.

Incredible Oat Bran Muffins, Plain, Bluberry or Banana





is not very dense and is not too sweet, allowing the wonderful bran flavor through. This came off the back of a quaker oat bran hot cereal box. Only 120 calories per muffin!








2 cups oat bran hot cereal, uncooked (I use Quaker)


1/4 cup firmly packed brown sugar


2 teaspoons baking powder


1/2 teaspoon salt


1 cup milk


1 egg


1/4 cup honey or molasses (I haven't tried molasses yet)


2 tablespoons vegetable oil





*Blueberry or banana variations are at bottom.


Pre-heat oven to 425 degrees F. Line 12 medium muffin cups with paper baking cups.


Combine dry ingredients. Add milk, egg, honey, and oil; mix just until ingredients are moistened.


Fill muffin cups 3/4 full. Bake 14-17 minutes or until golden brown.


*NOTE: You can stir in 1/2 cup frozen blueberries or 1 medium ripe mashed banana for a fruity variation.


These are also great the next day cold if you seal them in a baggy or stick em in a container to keep em fresh.
