What's your best tuna salad recipe?

EARTHGUY SALAD


This salad can also be used as a tomato stuffing.





2 (7 oz.) cans tuna


1 C. diced celery


1/4 C. sweet relish


1/2 tsp. seasoned salt


1/4 tsp. white pepper


1/2 tsp. dry mustard


1/4 tsp. dried tarragon


1 tsp. dried parsley flakes


1 T. instant minced onion


1 T. lemon juice


1 C. mayonnaise





Drain and flake tuna; add celery and relish. Combine remaining ingredients; mix well. Add to tuna; mix thoroughlyWhat's your best tuna salad recipe?
I rather like this one:





For two:


1 large can tuna, or two fresh steaks, seared and flaked


1 small onion, or 2 spring onions, finely chopped


approx 1 handful mixed cooked beans, including red kidney


Enough pasta (eg fusilli) for two, cooked then drained in running cold water


2 eggs, just hardboiled and cut lengthways into 4





Vinaigrette, made with equal quantities of lemon juice and white wine vinegar; salt and pepper; a pinch of sugar; a quarter teaspoon of dijon mustard; light olive oil - 3-4 parts oil to 1 part lemon/vinegar. Shake all well in a screw-top jar.





Throw the pasta into a serving bowl, then add the other ingredients except for the egg. Shake the dressing again and add enough to moisten: toss. Arrange the egg over the top and serve immediately with crusty bread. (Warm garlic bread is good!) Serve the remaining dressing on the side in a small jug, with sea salt and pepper mill.





This is filling, and would make a good lunch - as would a Tuna Salade Nicoise!
