1 large egg


1/3 cup whole milk


1/2 teaspoon salt


30 saltines


1/4 teaspoon cayenne


4 (5- to 7-oz) catfish fillets


6 cups vegetable oil (48 fl oz)





Whisk together egg, milk, and 1/4 teaspoon salt in a medium bowl. Pulse saltines in a food processor until finely ground, then stir together with cayenne and remaining 1/4 teaspoon salt in a shallow baking dish.


Dip 1 catfish fillet into egg mixture, letting excess drip off, then dredge in saltines to coat and transfer to a wax-paper-lined tray. Coat remaining fillets in same manner.


Preheat oven to 300掳F.


Heat oil in a 4- to 5-quart heavy pot (preferably cast-iron) over high heat until it registers 360掳F on thermometer. Carefully lower 1 fillet into oil (temperature of oil will drop to 340掳F), then fry until golden and just cooked through, 3 to 4 minutes. Transfer fillet with a slotted spatula to a rack set over paper towels to drain briefly, then transfer to a shallow baking pan and keep hot in oven. wash the fish with a little lemon juice as catfish can be pretty gamey... pat dry... season lightly with salt and pepper .. dredge in fine cornmeal that has been seasoned with cajun seasoning and pan fry until the crust is golden brown on both sides.





Mix 1 cup of tartar sauce with 2 tablespoons of whole grain mustard and tabasco to taste for a good side sauce.

Ingredients:





Enough catfish fillets for 3 or 4 medium


pieces per person.


1 cup Yellow Corn Meal (This should be enough


to coat the catfish fillets)


2 teaspoons Lawry's Seasoned Salt


Crisco or your favorite vegetable cooking oil.


(Enough to cover the catfish).





(I use a deep fryer although a frying pan will


work just as well)








The secret to fried catfish is cooking


it at just the right temperature to


seal in the moisture and flavor. When


you first drop it into the grease you


want to seal it and then cook it.





You can use fresh catfish fillets, or


you can use the farm raised variety


available in the supermarket freezer section.








Rinse the fillets thoroughly and then


pat dry with a paper towel. If using fresh


catfish, skin the catfish and then wash


thoroughly. Pat dry with a paper towel.





Roll the fresh, catfish fillets in


a mixture of corn meal and Lawry's


Seasoned Salt. If you cannot find


Lawry's Seasoned Salt, then your favorite


seasoned salt will have to do. It's


just that Lawry's Seasoned Salt is a


southern favorite. A quick way to coat


the fish in the corn meal and season


mixture is to place it in a plastic bag


and just shake it.





Drop into deep fryer at 325 degrees.


Fry until it turns golden brown, about


5 minutes. Dump onto paper towel and


allow to drain.





Serve with collard greens, macaroni


and cheese n cole slaw.

Mix a cup of flour with a pinch of salt and pepper. Salt and pepper the fish. Dredge the fish in the flour, and set aside. Beat an egg with a cup of milk. Put a good 2 cups of cornmeal in a round cakepan, season with salt and pepper. Stoneground cornmeal works best, but any good cornmeal works- I prefer yellow, but have know a few that like white. Heat oil in cast iron skillet or chicken fryer, enough for a good 2 inches deep, until a bit of cornmeal tossed in bubbles. Dip the fish into the egg/milk mix, then roll in the seasoned cornmeal, then into the hot oil. When the fish floats, it's done. Scoop it out, drain on paper towels and eat. Mix 1 cup of the cornmeal with 3/4 cup of flour, 1 tablespoon of baking powder, the leftover milk/egg mix, and add more milk if needed to make a really thick batter. Add as much minced fresh onion as you like to the batter, then drop into the hot oil to make hushpuppies. The batter needs to be so thick you have to scrape it off the spoon, or it will come apart in the oil. It's a high fat meal, but boy is it good!
